Red Rice is not a commonly known variety yet is readily available in Sri Lanka and some other Asian countries. You can find some types of Red Rice in Health Food shops but I have yet to find the Sri Lankan variety in these shops.
Red Rice
This rice gets its colour from an antioxidant called anthocyanins which are also found in purple and red fruits and vegetables. There are many suggested health benefits to red rice but more research needs to be conducted. It has a nutty, earthy flavour, with a texture somewhere between white and brown rice. It cooks in about 10 -1 2minutes. This is a firm favourite in the Hari Hari household and the colour is definitely a pretty picture to behold on your plate.

Red rice is also great when used to make the traditional Sri Lankan Kiri Bath, a super tasty alternative way to eat rice with your curry. Though Kiri Bath doesn’t have to be just savoury!!
Store in an airtight container. Once cooked you can keep it in the fridge for 4 days and up to 3 months in the freezer (that is if you manage to not eat it all at once!)
