This is not something I’ve really experimented with before. However on a recent shopping trip to Waitrose, I discovered that they had a huge reduction on a lot of their big bags of fresh herbs. Coriander, parsley and dill to be precise. I purchased the lot! I couldn’t help myself ; ) I freeze my fresh herbs quite frequently. I do this to prevent them from going off before I get the chance to use them up. Herbs are perfect for freezing and I will show you in another blog post later, how and what I do. With so much coriander and parsley (even after freezing 4 bags of each) I decided to try my hand at making a Sri Lankan spiced fusion Salsa!!
Time to Prepare Fusion Salsa
Preparation Time – 5-10 minutes
3 cloves garlic
Large chunk of ginger
2-3 large handfuls of washed and dried fresh coriander/cilantro leaves (stalks and all)
1-2 handfuls of washed and dried parsley (stalks and all)
Splash of red wine vinegar
75-100ml olive oil
1 tsp ground cumin
1 tsp roasted curry powder
1-2 tsp turmeric
1 tsp chilli flakes
Squeeze of fresh lime juice
Pinch of salt to taste
Time to Prepare
Add all the ingredients into your food processor/blender and blitz on full power for 3-5 minutes depending on the consistency you are after.
Once you have reached the desired consistency, transfer into a bowl and your Salsa is ready to serve!
Cover with cling film and it will keep in the fridge for about 4-5 days.
I have used this as a salad dressing. As a pizza topping. Mixed into a pasta dish. As a dip. In a sandwich. As a side to my roast dinner (instead of mustard). As a dip for my crusty rolls. As a topper for cheese and crackers. Basically, you can use this for anything edible if you want to add a different flavour dimension. It helps to make a rather simple dish look and taste extraordinary!
Optional but Super Tasty
You can use any fresh herbs to make this dish, it all depends on what takes your fancy. I’ve made this with dill, rosemary and even thyme. They all add a distinctly different flavour!
You could add fresh chilli instead of chilli flakes if you prefer.
