Cucumber Raita

Cucumber Raita is an excellent chilled side dish for any curry or a dip for poppadoms. It adds a refreshing flavour to your curry feast and is a firm favourite in our household.


Ingredients for Cucumber Raita

Bits to buy
1 cucumber
1 small red onion
1 tub natural yoghurt
1 – 2 cloves of crushed garlic

From the cupboard
A pinch of salt
A pinch of pepper

Optional but super tasty
A fresh green chilli de-seeded and finely chopped
1 tsp cumin powder, coriander powder or cayenne pepper

Time to Get Cooking
Wash and top & tail the cucumber.  Cut in half length ways and then slice the cucumber as thinly as possible (alternatively you can grate the cucumber) . Pat dry with a kitchen towel, drain of any excess water and place this in a bowl with all the ingredients and mix together.  Add the salt and pepper to taste. Stir it through and its ready to eat.

Top Tips 
Cucumber Raita is a perfect accompaniment to any Sri Lankan Rice and Curry.  Why not try it with a Hari Hari Prawn Curry ( and a Hari Hari Beetroot Curry (  Any of the Hari Hari packs will work perfectly with this recipe so just pick which curries you want and add this as a side!
